Wild Mushrooms: Where to Buy

Legal situation: since 2012, Portugal has had no formal licensing system for commercial wild mushroom foraging. Thousands of tonnes of mushrooms are exported annually through illegal channels, especially from Trás-os-Montes to Spain. More: Foraging laws and regulations

Nãm Mushroom: urban farm

Nãm — Lisbon’s first urban mushroom farm (since 2018):

  • Grows oyster mushrooms (Pleurotus ostreatus) on spent coffee grounds
  • Partnership with Delta Cafés (Grupo Nabeiro)
  • Production: 4 tonnes of mushrooms per month
  • Coffee grounds collected from 100+ restaurants across Lisbon
  • Spent substrate → compost for local farmers
  • Address: Rua Amorim 11, Lisbon — open for visits
  • Also produces home growing kits

What’s Available in Supermarkets

In regular supermarkets (Continente, Pingo Doce, Lidl):

  • Button mushrooms (Agaricus bisporus) — white and brown (cogumelos)
  • Portobello — large brown button mushrooms
  • Oyster mushroom (Pleurotus) — increasingly common
  • Shiitake (Lentinula edodes)
  • Shimeji (Hypsizygus) — in larger stores
  • Dried mushrooms — porcini, mixes

Wild mushrooms are virtually not available in supermarkets — only through specialist suppliers.

Cross-Border Trade

The Illegal Export Problem

Trás-os-Montes is the epicentre of the problem. Thousands of tonnes of wild mushrooms are exported to Spain annually through illegal channels. Environmental organisation Quercus has repeatedly called for market regulation.

Scale of the problem:

  • Spanish middlemen buy mushrooms from Portuguese foragers at low prices
  • Mushrooms are then sold on Spanish and European markets
  • The absence of licensing (since 2012) makes enforcement virtually impossible
  • GNR/SEPNA conducts raids, but resources are insufficient

Food Safety

Mushrooms sold on the market fall under EU regulations:

  • Regulation (EC) 178/2002 — general principles of food safety
  • Regulation (EC) 852/2004 — food hygiene
  • ASAE monitors quality at markets

Buyer’s Tips

  1. Buy at festivals and local markets — fresher and cheaper
  2. Know the season: if “porcini” is offered in May — it’s likely frozen or imported
  3. Check freshness: mushrooms should be firm, no slime, no off-putting smell
  4. Avoid mushrooms of unknown origin from street stalls
  5. Dried mushrooms — a good option outside the season (porcini, chanterelles, horn of plenty)
